Crispy on the outside and fluffy on the inside, this baked sweet potato in air fryer recipe is fast, healthy, and incredibly easy. Perfect for busy nights or meal prep.


Ingredients

2 medium sweet potatoes

1 teaspoon olive oil

1/2 teaspoon kosher salt

Optional toppings: butter, cinnamon, maple syrup, Greek yogurt, black beans


Instructions

1. Scrub and dry the sweet potatoes thoroughly.

2. Pierce each one with a fork several times.

3. Rub each sweet potato with olive oil and sprinkle with kosher salt.

4. Place them in the air fryer basket with space between each one.

5. Air fry at 390°F for 35–40 minutes, flipping halfway through.

6. Check for doneness with a knife—it should slide in easily.

7. Let them cool for 5 minutes before slicing open.

8. Fluff the inside with a fork and add your favorite toppings.

Notes

Choose sweet potatoes that are similar in size so they cook evenly.

Smaller potatoes may cook in 30 minutes; larger ones may take up to 45.

For best texture when reheating, use the air fryer at 375°F for 5–7 minutes.

Avoid microwaving to preserve the crispy skin.
