Ingredients
4 boneless chicken breasts or thighs
2 cups mushrooms (cremini, button, or shiitake)
3 tbsp olive oil or butter
1 small onion, finely chopped
3 garlic cloves, minced
1 cup chicken broth
1 cup heavy cream (optional)
½ cup dry white wine (optional)
1 tsp thyme or Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. Season chicken with salt, pepper, and thyme.
2. Heat oil in a skillet, sear chicken 5–6 minutes per side, then set aside.
3. Add mushrooms and onions to skillet, cook until golden.
4. Stir in garlic, broth, and wine. Simmer 5 minutes.
5. Add cream (optional) and simmer until thickened.
6. Return chicken to skillet, cook 8–10 minutes until done.
7. Garnish with parsley and serve.
Notes
Serve with mashed potatoes, pasta, or rice.
For dairy-free, replace cream with coconut milk or extra broth.
Canned mushrooms can be used instead of fresh.
