Description
This easy Italian chicken recipe features a rich tomato sauce, bold herbs, and juicy pan-seared chicken perfect for pasta or rice.
Ingredients
4 boneless, skinless chicken breasts
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon Italian seasoning
2 tablespoons olive oil
3 garlic cloves, minced
1 small yellow onion, sliced
1 can (14 oz) diced tomatoes
1 tablespoon tomato paste
½ cup chicken broth
¼ teaspoon red pepper flakes
1 teaspoon dried basil
Fresh parsley or Parmesan for garnish
Instructions
1. Pat chicken dry and season both sides with salt, pepper, and half the Italian seasoning.
2. Heat olive oil in a skillet over medium heat. Sear chicken 4–5 minutes per side. Remove and set aside.
3. Add garlic and onion to skillet. Cook until soft and fragrant.
4. Stir in tomato paste, diced tomatoes, broth, red pepper, and remaining seasoning. Simmer for 5 minutes.
5. Return chicken to skillet. Cover and simmer 10–12 minutes until fully cooked.
6. Garnish with basil or parsley. Serve hot over pasta or veggies.
Notes
You can use boneless thighs for a juicier result.
Add cream for a creamy Tuscan-style variation.
Store leftovers in the fridge for up to 3 days.
