Description

A fresh and simple Mediterranean cucumber salad made with juicy tomatoes, feta, olives, and a lemony dressing—perfect as a side or light meal.


Ingredients

2 English cucumbers, thinly sliced

1½ cups cherry tomatoes, halved

½ small red onion, thinly sliced

½ cup kalamata olives, halved

½ cup crumbled feta cheese

¼ cup chopped fresh parsley

3 tbsp extra virgin olive oil

2 tbsp fresh lemon juice

1 tsp dried oregano or ½ tsp sumac

Salt and cracked black pepper to taste


Instructions

1. Slice cucumbers and tomatoes; thinly slice red onion.

2. Combine all vegetables and feta in a large bowl.

3. Whisk together olive oil, lemon juice, oregano, salt, and pepper.

4. Pour dressing over salad and toss gently.

5. Top with fresh herbs and let rest for 10–15 minutes before serving.

Notes

Use Persian cucumbers or Roma tomatoes if preferred.

For added protein, toss in chickpeas or grilled chicken.

Best served fresh, but can be stored for up to 2 days.
