Description

Sweet Alabama Pecanbread is a chewy, buttery Southern dessert packed with toasted pecans. Simple ingredients, no mixer needed.

1 cup sugar 1 cup light brown sugar, packed 1 cup vegetable oil or melted butter 4 large eggs 1 ½ cups all-purpose flour 2 teaspoons baking powder ½ teaspoon salt 1 teaspoon vanilla extract 2 cups chopped pecans


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13 baking dish or line with parchment. 2. In a large bowl, whisk sugar, brown sugar, oil (or butter), and eggs until smooth. 3. In another bowl, stir together flour, baking powder, and salt. 4. Gradually add dry mix to wet, then stir in vanilla. 5. Fold in chopped pecans evenly. 6. Pour batter into prepared pan and smooth top. 7. Bake for 30–35 minutes until golden brown and a toothpick comes out clean. 8. Cool completely before slicing and serving.

Notes

You can toast the pecans before adding for extra flavor. Add chocolate chips, shredded coconut, or spices like cinnamon for variations. Wrap cooled slices tightly for freezing up to 2 months.
